Biloba Brewing started in Brookfield in 2014. Named after the “Ginkgo biloba” tree, this family-owned microbrewery opened in a small building just off Brookfield Road; in 2018, it moved to a larger facility right on Brookfield Road in this booming suburb’s original downtown.
Biloba’s beers and specialty ales regularly rotate; they feature several on tap at any given time. Some of Biloba’s offerings include their Hefeweizen; Grapefruit Radler; their Section 25 Farm Ale; a Kole Porter; the Smokin Gramma, aged in Bourbon barrels with vanilla and Bourbon hints; a Chocolate Bourbon-Barrel Aged Belgian Stout; Biloba Haze, a citrusy IPA; the Bitter Bitch IPA (hey, I don’t name ’em); and a selection of rotating taps. A seltzer or two is usually available too, along with the rotating tap beers. Six of their beers are also available in to-go growlers.
Biloba Brewing Tasting Room Hours are Wednesday, Thursday, and Friday, 5pm – 9pm. The Tasting Room has a bar in front and several areas for seating with games available and a variety of table seating. A front patio lets patrons enjoy their brews in the nice weather. Food can be brought in from area restaurants.
You’ll find their building right on Brookfield Road about one mile south of Highway 190/Capitol Drive and about three miles north of U.S. 18/Bluemound Road, near I-94.
